The Huntington Estate sparkling chardonnay pinot noir features a 50/50 blend of chardonnay and pinot noir from the Huntington Estate vineyards.
The process involves first picking the fairly green vineyards at around 11 Baumé. The chardonnay and pinot noir are picked fairly green in late January to mid-February, at least 12 months with the wine on lees, being riddled (gently turned periodically) and then disgorged.
The wine can be drunk now or in the next few years. It is the perfect aperitif and matches well with oysters.
